Similar to Italian casarecce, Agrozimi striftária is a spelt pasta in a popular twisted shape that everyone loves. It's made with fresh spring water from the northern Greek village of Arávissos, where Agrozimi has been based for three generations. They produce all their Greek pasta with a long and careful process - top-quality flour is kneaded with no added salt, shaped through bronze dies, and slowly air-dried at low temperatures for unmatched flavor and nutritional value. Spelt is also more easily digested, since its gluten has more water-soluble proteins. In fact, spelt’s total protein content is up to 25% higher than most typical wheat varieties. Spelt is an excellent source of iron, magnesium, zinc, vitamins B1 and B2, and beneficial fatty acids.
